In the spirit of reviving my poor, neglected blog, I have joined a small group of photographers in the undertaking of a monthly photo challenge for the year of 2012. For each month, a color theme has been designated, and on the 26th of that month, every photographer in the group will post their themed images.  Instead of being presented with only my perspective of that month's theme, you are presented with the perspective of the entire group, as at the bottom of our posts, we link to the next person in our circle of photographers, so that if you choose, you can keep clicking and see our very different visions of the same theme! Fun, right?

The theme for August is Rainbow Bright (any vivid bright colors).
This past couple of months have been one filled with thoughts of food as my husband and I have embarked upon a new diet and journey of fitness.  In addition to boxing, we're now lifting and on an amazing diet that I would say hardly feels like a diet.  I won't bore you with details (if you want details, send me a message :)), but I will say that instead of just aiming for a calorie deficit, it focuses on giving your body what it needs to put on lean muscle mass, which burns the fat, and I've now got some clearly defined abs. :D
Part of this wonderful diet has been to find new foods that will meet the needs of our bodies, in a healthy way, and in the process, I discovered an awesome blog/recipe site called The Epicurean Body Builder (http://epicureanbb.com).  This gal has some absolutely amazing recipes, and you would be shocked at how low in calories and fat this stuff is.

Meet the  Strawberry Brownie Cheesecake with Balsamic Syrup.  With only 200-some calories and only 3.3g of Fat, this is something you could easily say yes to.  My family, including my kids, LOVE it!  There are tons of cheesecakes we haven't tried yet, but I'm making one a week for my husband and kids to enjoy, and hoping to convert some of these to dairy free for myself!

And this, to me, is a bright rainbow of food.
